Chez Chat -- Le Chef: Simple Barbecue Red Sauce

SIMPLE BARBECUE RED SAUCE

Commercial barbecue sauces usually contain sugar in one form or another and are sometimes more of a disguise for less than wonderful grilled meat than a complement to good barbecue. This is a basic red sauce that has no added sugars and goes especially well with slow cooked, wood smoked pork. It is a savory, not especially sweet sauce.

1 cup Catsup
½ cup Worcestershire Sauce
1 teaspoon salt
1 teaspoon chili powder
½ teaspoon black pepper

Mix together in a non-reactive pan, cook over medium heat until reduced by 10%. If hotter sauce is desired, substitute Cayenne pepper for 1/8 to 1/4 of chili powder.

Use the proportions to make as much as you want. It keeps just as well as a bottle of catsup so it is easy to make ahead. The idea isn't to make a batch of liquid fire but to add another layer of flavors to an already pleasant experience.
